Dear Members,

Its time to take out the tuxedoes and the lovely evening gowns and join in the society's gala celebration of Singapore's National Day, which will take place on 8th August at the Ritz Carlton Millenia.

This year we are very fortunate indeed to be able to arrange for a dinner featuring the classic French cuisine of Chef Arnaud Thulliez, who is the Executive Chef of Ritz-Charlton Millenia, Singapore and was crowned the Executive Chef of the Year in the World Gourmet Summit Awards of Excellence 2012.

Originally from North France, Chef Thulliez's passion for food and cooking was encouraged by the chef in a family-run delicatessen, owned by his mother. Chef Meurin encouraged him to expand his culinary horizon in order to gain an international perspective, since from a young age. Thulliez had enjoyed dining in Marc Meurin's two-Michelin-star restaurant.

With a culinary career that spans Paris, London, Dubai, Shanghai and Singapore, Chef Thulliez was most recently executive chef at the Jumeirah Burj al Arab, Dubai. Chef Thulliez arrived in Singapore in 2007, to helm the kitchens at the Fullerton Hotel, when he managed a brigade of over 100 chefs. He believes in allowing flavours of the finest ingredients to impress the palate.

We are pairing Chef Thulliez's menu with rare Pomerols from the 1995 vintage. 1995 was an excellent year for both sides of the Gironde. A mild winter and early spring was followed by a dry, hot summer. It did rain in early September but crucially, there was perfect weather from September 20th through to October. Quality is high across all levels and appellations, with the merlot-dominated wines of St-Emilion and Pomerol being particularly successful. The best wines are very ripe and display good concentration and structure.

For members who enjoyed the first vertical of 1995 pomerol wines at last year's national day dinner, we are pleased to feature three of the finest 1995 pomerols at this dinner. These are preceded by an opening act of 2 pomerols from the great 98 vintage, giving us a useful comparison of the 2 best pomerol vintage years of the 1990's.

In addition, we will be holding our first Charity Wine Auction at this dinner, with the beneficiary being the Assisi Home and Hospice. Details will follow in a subsequent email. Do come with your cheque books and do your part in helping the less fortunate.
