Our first event in November is indeed a lovely one. We are fortunate to have Mr. Pierre Grafeuille, the Commercial Director of Château Léoville Las Cases, to share with us the highly-respected wines from this “Super Second Growth” estate along with other wonderful wines from the Domaine Delon stable.
Château Léoville Las Cases needs no introduction. With over 97 hectares of planted vines, Léoville Las Cases is the largest of the three Léoville estates. Representing 60% of the former Domaine de Léoville, Château Léoville Las Cases was purchased from Jean de Las Cases in 1900 by Théophile Skawinski, the great-great-grandfather of current owner Jean-Hubert Delon, who also owns Château Potensac in north Médoc and Château Nénin in Pomerol.
The sheer quality of Léoville-Las Cases derives from its exceptional vineyard land, particularly a 55-hectare parcel called "Clos de Léoville Las Cases" which forms the backbone of the Grand Vin de Léoville. The "Clos de Léoville Las Cases" encases a terroir of very great complexity as the plots contain many different types of soil composition. It is planted principally with Cabernet-Sauvignon, which at 66% is the predominant variety on the estate, the remainder being Merlot (24%), Cabernet Franc (9%) and Petit Verdot (1%). Highly-respected for generations, the Grand Vin de Leoville is classified as a Second Growth in the original Bordeaux Wine Classification of 1855 and has earned inclusion in the rarefied category "Super Second Growth" due to its quality being almost at the level of the First Growths.
Château Léoville Las Cases not only produces the Grand Vin de Léoville but also the Clos du Marquis. Created in 1902, the Clos du Marquis has its origin in the “Petit Clos” adjacent to the Château de Léoville. The Clos du Marquis therefore comes from the great terroirs of the Saint-Julien appellation that were not part of the original Léoville estate. Château Léoville Las Cases therefore comprises two properties with distinct terroir characteristics, producing two premium wines with different taste profiles, despite an obvious affiliation.
We are proud to be showcasing the wines from Château Léoville Las Cases in the classic and sophisticated setting of Les Amis. Les Amis, the French translation of ‘The Friends’, opened in March 1994 and has been at the forefront of the fine-dining scene in Singapore ever since. Les Amis is currently helmed by Executive Chef Sebastien Lepinoy, a protégé of legendary chef Joël Robuchon. Chef Sebastien has worked in Michelin-starred restaurants since beginning his career in 1990 at the one-star Chateau de Noirieux in Briollay. This was followed by his stint at the three-star Jamin (renamed as Joël Robuchon in 1994) that marked the beginning of his chapter with Chef Robuchon. He has also cooked at restaurants such as Restaurant LAURENT in Paris before coming back to work closely with Chef Robuchon at Societe de Gestion Culinaire. In 2002, Chef Sebastien was sent to Le Grand Café in Ukraine where he was awarded the “Best Chef in Ukraine”. During his stay at Hotel Metropole Monte Carlo in 2006, in collaboration with Chef Robuchon, the restaurant received 2 Michelin stars in 2007. Chef Sebastien uses classical French technique with modern aesthetics when he cooks. He always tries to incorporate elements of what he has seen and tasted during his stay in Asia into his menus so that it will complement the local climate and palates.
